Creamy Oven-Baked Tomato soup (vegan)

Kitchenware • ovenproof glass bowl • cutting board • knife • tablespoon • hand blender • bowl


Ingredients (for 1 person) • 6 medium tomatoes • 75 g vegan feta cheese (e. g. from bedda), alternatively creamy coconut milk (60 % coconut) • 1 tablespoon of avocado oil • spices: rosemary, oregano, basil, salt, pepper • optional: pumpkin seeds to decorate


1. Cut the tomatoes into slices and place them in the ovenproof bowl.

2. Cut cheese into cubes and put them on the tomatoes.

3. Add a tablespoon of oil and the spices.

4. Bake for 10 minutes at 180 °C.

5. Put it in a bowl and mix it with a hand blender.

6. If you wish, decorate with pumpkin seeds before eating.
