Green Brioche Buns

Kitchenware • Stand mixer with dough hooks and mixing bowl • Large glass bowl • Tablespoon • Teaspoon • Scale • Cooking pot • Wooden spoon • Hand blender • Baking tray with parchment paper • Kitchen towel • Kitchen brush

Ingredients • 3-4 g instant dry yeast (for 250 g flour) • 1 tablespoon warm water (warm, NOT HOT) • 3 kiwis • 40 g warm milk (warm, NOT HOT) • 28 g butter • 1 large egg (1/2 for the dough, 1/2 for later) • 1 tablespoon sugar • pinch of salt • 220 g all-purpose flour • some butter or oil (my recommendation: coconut oil)

1. Preheat the oven at 50 °C (rotating heat).


2. Cut the kiwis into little cubes (try to leave out the white parts) and cook them in a pot at medium heat until juice comes out. Stir from time to time while crushing the kiwi pieces with the wooden spoon.

3. You should now have about 140 g of kiwi. Let cool down a little and mix them with a hand blender until they look like puree.

4. In a mixing bowl, put instant yeast, WARM water, kiwi puree, WARM milk, butter, 1/2 egg, sugar, salt and flour, and turn on the stand mixer. I recommend starting at low intensity (3-5 min) and then move on to medium. Once the dough pulls away from the sides of the bowl, it is ready.

If that doesn’t happen, add some more flour, spoon by spoon, until it does.

5. Move the dough into a lightly greased large glas bowl (twice as large as your dough ball), cover it with a kitchen towel and place it into the preheated oven for about 1 hour so that it can rise.

6. Place the risen dough onto a flat surface and divide it into 4 equal parts. Form 4 x 3 dough snakes and start braiding each set of 3. Press the ends together. Form a bun with your braid.

7. Place your buns on a baking tray with parchment paper, cover it once again with the towel and let it rise at room temperature for 30 minutes while preheating the oven at 175 °C.

8. After 30 minutes brush the buns with the 1/2 egg previously put aside. Put the buns into the oven for about 25 minutes until they become golden.
